Chocolate Chip Cookies for Two
Have you ever craved a chocolate chip cookie but didn’t want to make a full batch?! Well here’s a recipe that makes TWO perfect cookies!! See recipe below!! Ps these can be made gluten-free and dairy-free!
Ingredients:
4 tbsp of unsalted butter (I used a dairy-free unsalted butter)
4 tbsp of brown sugar
2 tbsp of granulated sugar
1 egg (room temperature)
1/4 tsp of vanilla
pinch of salt
1/2 cup flour (I used gluten-free)
1/4 tsp of baking soda
handful of chocolate chips (I used Hershey’s gluten-free milk chocolate chips)
parchment paper
Instructions:
Step One: Preheat oven to 350ºF.
Step Two: In a pan on the stovetop, melt unsalted butter until it starts to brown and comes to a boil.
Step Three: Whisk together melted butter, brown sugar, granulated sugar. (Just a quick mix)
Step Four: Add in just the egg yolk, vanilla and salt. Do another quick whisk together.
Step Five: Add in flour and baking soda and whisk until flour is fully mixed in. (If you do gluten-free flour, add in 1/8 tsp of xanthan gum.) Add in a handful of chocolate chips and do one final quick mix again.
Step Six: Line baking sheet with parchment paper and scoop two balls onto sheet. Bake in oven for 10-15 minutes. You want the edges of the cookies to be golden brown and the middle to be soft.
Step Seven: Let the cookies completely cool down for 20-30 minutes. Serve with milk and enjoy!!
